Why is my gammon tough?
1. Go easy when simmering – ‘If you’re starting off by cooking your ham in water, make sure you’re poaching it and not boiling it. If you’re boiling it, the ham becomes quite tough and tight, so you want it on a gentle simmer, really around 85 degrees – no hotter than that. You want slow cooking as that helps to keep it moist.’
Is it better to bake or air fry steak?
Bring the bistro experience home with Air Fryer Steak ! Seared outside, juicy inside, and fast, air fried steak is astonishingly easy and tastes phenomenal. It changed the way we cook steak at home! - High heat is the best for cooking steak, because the less time it spends cooking, the more tender it will be. That makes the air fryer GREAT for cooking steak.
- The air fryer cooks food by blowing intensely hot air down and around it—an ideal way to make juicy, tender steak that will have your family oohing and ahhing,

Why is my air fryer steak tough?
Tips to make the best recipe –
Don’t use steaks that are less than an inch in thickness. Thin steaks are prone to overcooking quickly and becoming chewy. To enjoy the best flavor and texture, allow the steaks to come to room temperature at least 30 minutes before cooking them in the air fryer. Don’t overcrowd the air fryer basket and leave some space between steaks for airflow to cook evenly. Pat fry the steaks before seasoning them.
Can gammon steak be pink?
You will see the gammon steak is a deep pink when you start cooking then it goes pale after a couple minutes. That lighter pink color means it is done! You can eat the whole gammon steak if you wish or trim off the fat and eat the rest.
Does gammon need soaking?
The resulting ham has notes of apple compote and a very satisfying sticky finish to the outside of the ham. – 1. Soak the gammon in cold water for 1 to 1 and a half hours. This will get rid of any excess salt from the curing process. ( Do note that if cooking with a dry cured gammon you will not need to soak before you begin cooking as the salt will not have penetrated through the meat to the same extent as with a wet-cured gammon.) 2.
Preheat your oven to 140°C Fan and place the gammon in a deep roasting tin or a cast iron enameled casserole with a tight fitting lid.3. Take two red onions, slice off the top and the tail and remove the outer skin. Poke 3 cloves into each onion. Tuck these next to the ham along with 3 bay leaves and 5 whole allspice berries.
(You can always play around with the spices too!) 4. Find a nice dry cider – you’ll need at least 500 ml to be on the safe side. ( You could swap out the cider for water or experiment with white wine like a Riesling.) Heat up your cider in a saucepan until the surface is properly simmering.
- Pour the hot cider about half way up the sides of the gammon.
- Pop on the lid of your casserole or if using a roasting tin, make a loose tent of foil around the gammon, clamping the foil around the sides of the tin, it should be relatively air-tight.5.
- Bake in a preheated oven for 4 to 4 and a half hours.
When you remove the ham from the oven the core temperature should read minimum 75°C if it doesn’t continue cooking for another 30 minutes.6. Remove from the oven and rest for 20 minutes or cool down completely and enjoy sliced, in a sandwich. If you can hold yourself back, the baked ham should be happy wrapped in the fridge for up to a week.
Is cooked gammon the same as raw?
“A lot of people don’t really know the difference between gammon and ham, or how it’s made. Well, to be honest, there isn’t a great deal of difference, really, as once gammon is cooked, it becomes ham.” Gammon is sold in supermarkets and by your local butcher raw, and requires cooking before you can eat it, whereas ham is ready to eat immediately, but both are made in a very similar way.
Salting, brining and smoking techniques Both gammon and ham are cuts from the hind legs of a pig, and are either salted, brined, or smoked. Salting preserves food by drawing the moisture out, therefore allowing the meat to mature safely and to develop flavour. Brining works in a similar way, but actually works to keep meat as moist as possible for longer, rather than drying it out.
Finally, there are a number of different smoking techniques, such as cold smoking to add flavour before cooking, and hot smoking which adds flavour and cooks simultaneously. Gammon and ham are both absolutely delicious cuts of pork, which are incredibly versatile and can be enjoyed in a number of recipes – it’s no wonder we’ve been eating gammon and ham for thousands of years!
