HOW LONG TO DEFROST A TURKEY DEPENDING ON SIZE – In order to know how long to defrost a turkey before your Christmas meal, you must first know its size. There can be a big difference in thaw times for an 8kg whole turkey compared to a 2.5kg turkey crown,
- To defrost a 2kg – 2.5kg turkey crown – 1 day.
- To defrost a 3kg – 3.5kg turkey crown – 1 day and a half.
- To defrost a 2kg – 2.5kg whole turkey – 1 day.

Thoroughly defrost your turkey crown first (see note 1). Remove your turkey crown from the fridge about an hour before you are going to cook it. Preheat your oven to 180C / 160C fan / gas mark 4 / 350F about 15 minutes before you want to start cooking your turkey. It is really important that your oven is at the right temperature before you start. Next, drizzle 2 tablespoons of olive oil over the turkey and sprinkle over 1 teaspoon of salt and about 20 good grindings of black pepper. Rub the oil, salt and pepper all over the bird and place it, breast side up, in a roasting tray. Cover the turkey crown in foil and roast for 60 minutes. The foil will help keep the breast meat juicy and stop the skin browning too soon and burning before the meat is cooked. After 60 minutes, remove the turkey from the oven and remove the foil. Baste the turkey with the juices you find at the bottom of the tin. Put the turkey back in the oven, uncovered this time, for a further 20 minutes (see note 2). After 20 minutes, turn the oven up to 220C / 200C fan / gas mark 7 / 425F, remove the turkey from the oven and baste with the juices. Return the turkey back to the oven for a further 30 minutes. Cooking the turkey at a higher temperature will help the turkey skin to brown and crisp up.220C is also the perfect temperature for roast potatoes, meaning you can start your roasties now and they will be ready when the turkey has rested for 30 minutes. After the final 30 minutes (the turkey will have cooked for a total of 1 hour and 50 minutes), remove the turkey from the oven and check it is done. Stick a small sharp knife in the fattest part of the turkey crown, and the juices should run clear and the meat should be white. If you have a meat thermometer, the internal temperature should be 74C (165F). Transfer the turkey crown to a clean roasting tin (or similar). Allow the turkey to rest for 30 minutes, covered loosely in foil. It will not get cold and the meat will taste much nicer. Use the turkey roasting tray to make delicious easy peasy turkey gravy,

Can you leave turkey out overnight to thaw?
We’re all ready for the perfect Thanksgiving meal, until somebody remembers that somebody forgot to thaw out the turkey in time for it to go into the oven. Don’t fret, we’re here to help. (File photo) See if this sounds remotely familiar. You have invited everybody you ever knew over for your first Thanksgiving in your new home and you’ve planned a feast fit for a king.
- The sweet potatoes are ready and the green beans ready to be rendered wonderful in a casserole.
- You’ve even gone out and purchased a frozen turkey that is roughly the size of a 1974 Rambler and you have carefully and painstakingly measured it to make sure that it will fit into your oven.
- Everything is ready to go until you suddenly and without warning remember that a beast of a bird this size takes a little while to thaw out.
With guests and terror looming, what do you do? How do you get this beast ready for the oven? Last time I checked you can’t cook a frozen turkey and nobody yet has figured out how to serve a turkey-sicle as the main dish for the biggest one day eating event in the year.
Don’t fret. Thawing out a turkey is actually pretty simple. There really isn’t that much to it, but you do need to make sure you start the process in time to have it completed in time to cook it low and slow. There are basically two safe ways to thaw a frozen turkey. You can defrost it either in the refrigerator or in cold water.
If you choose the refrigerator method, you need to start early. And by early I mean WAY early. Most experts (me) say to figure on at least one day of thawing for every four pounds of turkey. Math, as we all know, wasn’t my strong suit in college but let me suggest to you that if you have a 20 pound bird that you’re trying to unfreeze in the refrigerator that you will need to start a good five days ahead of time.
- I don’t know about you but I don’t possess either the forethought or the space in my beer fridge to accommodate a frozen bird for nearly a week.
- But don’t panic, there’s another way, the way that I prefer.
- It is the cold water method.
- As you might imagine this method is a whole lot faster, but a lot more labor intensive.
It calls for immersing your frozen bird in cold water (usually in a sink or ice chest) and changing the water every 30 minutes until thawed. The math for this one is a whole lot easier to deal with, too. All you do is cypher up 30 minutes per pound, making sure to change the water every 30 minutes.
- The problem is most folks don’t have a sink big enough to dedicate to the process; you kitchen sink is equally valuable real estate (I use our laundry sink) so that’s why I offer the suggestion that you can use a 48 quart ice chest.
- Just be sure to keep an eye on it and make sure you change the water every 30 minutes or so.
Even the biggest turkey will be thawed in a few hours. The one thing you don’t want to do is to leave the bird on the counter overnight or in the sink without water. This is the quickest way that I know of to court disaster in the form of some nasty food borne illness.
How long do you cook a 2kg turkey crown?

Beware as a turkey crown is made up of entirely white meat which can be extremely dry if overcooked, so it’s vital not to overcook it. For the cooking times below we suggest you set the oven to 190C, Gas 5. If you have an oven with a fan setting set it to 170C. Using a fan oven is great if your oven is packed full as it will help everything to cook evenly.
These are times for cooking a turkey crown with bones. If your turkey crown has stuffing in the cavity base then calculate the weight of the bird once stuffed.
